Bullshit.

I went out to feed my meter and found a ticket. Not for expired meter... but because of no front license plate.

Called to court to contest this frivolous ticket. The response?

Every state has the right to make its laws. This state requires you to have a front plate. If you don't have one then you can have your boyfriend install it for you. Or you can move. There are about seven states that does not require it. You can move to Arizona.

Fucking bullshit. This city is just trying to rape anyone and everyone possible. I suppose everything has its price. In my case, being hard at work does too.

Solution: I am going withdraw $30 in ones, use said paper to wipe my ass, then proceed to the court house to pay my dues.

Actually that consumes too much energy. I'm going to quit my job, sell my car, and move to Europe. At least there I will receive free health care.

Red Velvet Perfection

Darling friends, I have received the yummiest recipe for red velvet cake. My co-worker, who used to be a pastry chef at the Ritz Carlton, is starting her own cupcake business. I told her that I wanted to make a red velvet birthday cake for a girlfriend and she gave me her fool proof recipe. She also gave me recipes for a ton of other goodies that I'll be baking in the future. My mouth is watering just thinking about it. :-) 

I made the cake twice in one weekend: first, a test batch of delicious cupcakes topped with cream cheese frosting and later, a double layer cake, frosted with vanilla buttercream. Heaven in a mouthful!

But first, the scrumptious pictures:

I know my cake decorating skills aren't up to par, but I promise the reicpe was delicious. It was the perfect texture: moist, fluffy, and scrumdiddlyumptious. In fact, it was so good that I ate it three days in a row. *burp* :-) My friends all took home leftovers too!

Now, for the yummy recipe! You'll need a food scale for this one. It’s in grams because my co-worker is a pastry chef and she measures everything very precisely.

RED VELVET CAKE

Ingredients:
328g All Purpose Flour
288g Sugar
4g Baking Soda
6g Salt
10g Cocoa Powder
286g Veg. Oil
252g Buttermilk
2ea Eggs
2 Tbsp Red Food Coloring
6g White Vinegar
6g Vanilla Extract

Directions:
1. Preheat oven to 350 (measure your oven with an oven thermometer to ensure accurate temp).
2. Combine all dry and sifted.
3. Combine all wet (I combined the sugar with the wet ingredients).
4. Add dry into wet and mix lightly. Pour into two cake pans. If you're making cupcakes with the recipe, fill the cupcake liners 2/3 to 3/4 full, but no more than 3/4.
5. Bake for 20 minutes. Touch the top of the cake. If it springs back with slight resistance, it is done. Otherwise, bake for 5 minutes and check again. Or, insert a toothpick diagonally into the center of the cake. It should come out mostly clean with a few crumbs attached.
6. Cool the cake to room temp before decorating.
7. Slice the rounded tops off the cakes and frost with desired icing.

BUTTER CREAM ICING
(I found this recipe on Chowhound and it worked perfectly with the cake)

Ingredients:
2 Tbsp Cornstarch
1 Cup Whole Milk
1 Cup Butter (softened to room temp)
1 Cup Superfine Sugar
1 tsp Vanilla Extract

Directions:
1. Mix cornstarch with milk. Cook on medium heat until thick, whisking the entire time. Set aside to cool.
2. Cream butter until fluffy.
3. Add vanilla and cooked cornstarch mixture slowly. Beat until it feels like whipped cream. The sugar should be dissolved and the frosting should not be grainy. (Touch with your fingertip to test)
4. Ice your cake!

Personally, I preferred the buttercream frosting, but if cream cheese is your liking, I used this recipe on the cupcakes:

CREAM CHEESE FROSTING

Ingredients
2  8oz packages of cream cheese softened to room temp
1 stick of butter (unsalted) softened to room temp
2-3 cups of sifted powdered sugar (depending on how sweet you like the frosting)
1 tsp vanilla extract 

Directions

1. Cream the butter + cream cheese together with an electric mixer until fluffy.
2. Add vanilla extract.
3. Gradually whip in the sifted powdered sugar, 1/2 cup at a time, until you reach the desired sweetness.
4. Continue to whip until fluffy.
5. Scoop into a pastry bag with a decorating tip and pipe onto your cupcakes!

Post Processing Raw Photos

 

Now that I have myself a shiny new camera to play with, my bathroom reading has exponentially grown. Shooting in raw and post processing is a whole new beast!

Of course, the goal is always to shoot a well composed, perfectly exposed picture in optimal lighting conditions so that minimal post processing is needed. But the world isn't perfect and that doesn't always happen, especially for a newbie like me. Sometimes, there's only a split second chance to take a picture. If I happen to forget to turn on spot metering or change the exposure compensation back to normal, the photo will turn out like crap.

Take this picture, for example:


Yuck! You can't see a thing in this picture.

The bride and groom were cutting their cake in the shade at 2pm with the sun was blasting brightly in the background. I had a split second to take this picture and I snapped the shutter before I realized that my camera settings were all wrong. Totally unsalvageable, right?



After some post processing in Camera Raw, I turned it into a black and white. Not perfect, by any means, but a lot better than the first version.



I didn't like the graininess of the black and white photo so I brought it into Photoshop for more adjustments. After playing around with some layers and filters in Photoshop... still not the best photo, but a little more presentable, if you don't mind the dreamy, ethereal look. It could use some opacity adjustments so that the effect is more subtle.



Photo number two. Bleeeechh. I can't even see the bride's and groom's faces.



After some exposure adjustments in Camera Raw and some Photoshop actions, no more missing faced bride and groom! Not perfect, but at least it's better.

Even decently exposed photographs can benefit with a little post processing.


This is the original photo, straight out of the camera. It was taken inside a yogurt shop where the lighting was yellow.


 
After some adjustments in Camera Raw (sharpening, white balance adjustments, turning up the contrast, etc) and a tiny bit of work in Photoshop, it looks much better.

As you can probably tell, I like my photos with strong contrast (the blacks very black and the whites very white). Not everyone likes their photos this way, but the beauty of post processing in Camera Raw is that everyone can adjust their photos to their own preferences.

I'm still mastering the art of understanding light well enough to have the camera set correctly the first time around. Since I'm not there yet, Camera Raw has been very forgiving. It's allowed me to save some pretty darn unsalvageable pictures. There's so much to learn about photography and post processing and I'm soaking it all in. I'm loving my new toy and new hobby!

On Married Life

YO, LJ!  Whaddup??!

Long time, no write, peeps! I haven't been here in so long, I almost forgot my password. Married life has really been keeping me busy. It's super fun, exhausting, a total time suck... and it brings me the greatest joy in my life.  My dear LJ friends (all 1.5 of you that still read this), I'm sorry for being out of the loop. Forgive me? I'll bribe you with a picture of one of the yummy red velvet cupcakes I made last week. I miss personal blogging, so I'm going to make a consistent effort to update this thing. I hope you are all doing wel! 


Yummy! I baked these last week and they came out super moist.

I recently watched the saddest romantic movie ever: PS I Love You, starring Hillary Swank. If you haven't yet seen it, I highly recommend it. It's a story about a young woman who has unexpectedly been widowed. She discovers that her late husband has arranged for her to receive a series of letters and messages to help her through the grieving process. I bawled like a baby for two hours. Even A had little salty droplets welling up in the corner of his eyes. Shhh, don't tell him I told you.

Anyway, there's a reason I mentioned this movie. While I was watching it, I was hit by how absolutely devastated I would be if something ever happened to A. I mean, of course I knew I'd be devastated—the movie just made the feeling alive to me. I don't think I can comprehend the utter loneliness I would feel if A died.

and I have this running morbid joke: I insist that I'm going to die before him and he insists that he will be the first to go. Neither of us wants to live alone without the other person. Death a morbid thing to kid about, I know. It's just our way of coping with the awful fear we both have. After watching PS I Love You, I realized that living without A would be just about the loneliest existence possible.

I write all of this to say that after nine months of marriage, I know what it feels like to be in a true, unconditional, sacrificial relationship. It's the most humbling, marvelous, and fulfilling experience of human existence. I don't yet know what it feels like to be a mother, but I imagine it can only get better from here.

Marriage is not 50/50. It's not even 60/40. A has taught me that marriage is 110/110. I've never loved, or been loved so selflessly. I know that A loves me unconditionally because his decisions always involve my better interest. He's always willing to sacrifice his pride and meet me on my side of an argument, which, in turn, softens my heart to see his point of view. If we order the same dish at a restaurant, he gives me the plate with the better cut of meat. He will tell me the hard truth, always gently, if it's something that will challenge me to grow. When we created our spending budget, he cut down his own monthy "allowance" (the amount we each get for personal spending) so that he could allocate more monthly money to me. He saves up his own personal spending money for months, without buying so much as a sock to replace his hole-filled footwear, so that he can buy me extravagant gifts. A even started stashing away money for our future kids before we were married. The man would not know how to make a selfish decision if his life depended on it—which is, of course, one of the reasons I married him.

I always tell A, "I'm the lucky one." I'm lucky because I got the better end of the bargain. Being with A challenges me to love selflessly, act humbly, and be grateful for everything I have, however little it may be. He always tells me, while we're not rich in money, we're wealthy in love. That, my friends, is what really matters.

Speaking of my selfless husband, my 30th 21st birthday is coming up and A got me the most amazing birthday present. He diligently saved up his allowance for the nine months that we've been married and he bought the Canon Digital Rebel XSi plus a new lens (Tamron 17-50mm F2.8). My dad contributed and got me a Canon 50mm 1.4 prime lens. I am so in love with my new toys!

I've wanted an entry level dSLR for a long time and I did a ton of research about Nikon vs. Canon. I knew that once I bought into one system, I would pretty much be branded for the rest of my life.  After all, thousands of dollars are invested into the lenses and equipment. So, after perusing multiple forums, websites, and reviews for hours upon hours, I concluded that Nikon and Canon are both pretty competitive with one another. They leap frog one another in technology year after year. Nikon will come out with a killer camera one year, and Canon will release something spectacular the next.

Nikon has some amazing pro & prosumer cameras out right now, but Canon's entry level dSLR had some features I wanted that weren't available on Nikon's entry level dSLR. I also chose Canon because there is a wider range of 3rd party lenses available (like the Tamron lens A bought me). These 3rd party lenses can be several hundred dollars less expensive than the signature Canon brand lenses. And by several hundred, I mean $400 vs. $1200. I opted not to go with Canon's prosumer line, the 40D, because the XSi has more than enough features for me and it's lighter and significantly cheaper. If I ever get better at photography and want to upgrade, I'll always have my Rebel as a light carry-around camera. By that time, I'm sure Canon will have released some amazing new camera body that will rival Nikon's D300 or D700. Anyway, I figure that great photos are  80% photographer, 15% lens, 4% camera body, and 1% luck. The camera is only a paintbrush. A more expensive one won't teach me to paint any better.

I spent last Saturday traversing SF with my brother and his fiancee taking pictures. We were all practicing with our dSLRs. Sometimes I forget how absolutely lucky I am to live in such a beautiful city.

BTW, gonna check out a new place for dinner this week- COSTA BRAVA-in PB. Spanish food..tapas..and most especially some paela..I've never had paella other than the one I've made before..so it'll be interesting to finally have some!

How to Be Single

So my current read is "How to Be Single" by Liz Tuccillo (co-author of He's Just Not That Into You.. and did work on some Sex And The City stuff). This is a definite read for my single ladies.. and even the not-so-single ones.

Initially it may seem like some book read out of desperation, but it's not. Let me get this clear: It's a NOVEL, not a MANUAL. lol. And it's highly entertaining. I find it SO amusing because I can relate. For example, here's an excerpt or two:

"Ruby understood that there are moments when no matter how badly you feel, it's your duty to get out of the house and help deceive a newly single person into believing that everything is going to be okay. Ruby knew, intuitively, that this was just such a night."

"In this case, the strategy was quite simple: places with tons of men. Because the one idea you don't want anywhere near your newly single friend is the one concept that is so all-pervasive, so oppressive, that it will be the first thought any sensible woman will have when she realizes she is now officially single, and that is of course, There are no good men left. And then the next thought would be I'm going to be alone for the rest of my life."


Since I'm not even a quarter of the way done yet, I can't confidently say this will be the greatest book ever. But I can say that, up to this point, I'm thoroughly amused.
